I have a small Kamado Joe Jr, which I use to prepare meat.
Brisket
I have to cut the brisket in half and only cook the fatty part (point).
- Salt, black peper, garlic powder, paprika
Target 225 F, up to 250 F in dome. Drip tray with water and cermaic deflector. Spray every hour. Pecan + Mesquite or Cherry + Hickory.
Internal 195 to 203.

- On at 7:08 AM, Off at 7:01 PM
- On at 6:41 AM, Off at 6:00 PM
Abou 12 hours.
Pulled Pork
Target 275 F at dome.
Internal 204 to 209.
- On at 12:42 AM, Off at 12:39 PM.
Tritip
A California treat. I can fit two tritips like a ying-yang symbol. Delicious reverse sear tritip. My favorite thing to cook since it is fast and makes good snackign meat.
Low and slow at 225 F dome until 125 F internal. Sear at 500 - 700 F for about 7 minutes.

Beef rib
It is hard to find a beef short rib plate. I had to ask the butcher at Whole Foods for an unsliced short rib.
