Milk is 3.25% fat, whipping cream is 36% fat and heavy cream is 40% fat.

Buttermilk has Lactococcus lactis or Lactobacillus bulgaricus plus Leuconostoc citrovorum. Creme fraiche has Lactococcus species L. cremoris, L. lactis, and L. lactis biovar diacetylactis. Sour cream has Lactococcus lactis subsp. lactis, Lactococcus lactis subsp. cremoris, Lactococcus lactis subsp. biovar diacetylactis, Leuconostoc mesenteroides subsp. cremoris.

Yogurt has Lactobacillus delbrueckii subsp. bulgaricus and Streptococcus thermophilus bacteria.
