Poolish, the bread pokemon. I tried Claire’s Classic Baguettes recipe on NYTimes and Richard Bertinet’s French Baguettes recipe on Gozney.

The difference between the two recipes is the poolish. It makes all the difference. I kept wanting to eat the NYTimes recipe. The Gozney recipe was easy to make bread, but it lacked the flavor from the poolish. Definitely need to do the poolish. Bertinet gave good advice to make smaller baguettes to get more practice shaping them. Practice makes better.

Maybe next will be the Tartine recipe that uses both a levain and a poolish.
