State Of Bbq
01 Dec 2023
The state of barbecue and grilling after less than a year of using a kamado. I like tritip the most so far. Leftovers in a sandwich is great. Great just picking out cold pieces from refrigerator. Also tritip can be cooked in an hour instead of 12 hours for brisket. Tritip is also often on sale. Affordable and delicious.
- Tritip - good, reverse seared with salt, pepper, and garlic powder. Need to cut it thinly across the grain.
- Brisket- okay, still haven’t tried wrapping it, but it is pretty good unwrapped. Takes a long time to cook.
- Ribeye - great, can’t beat reverse sear
- Pulled pork - okay, don’t know how much upside. Makes too much to eat.
- Galbi - okay, maybe I could improve the marinate or the quality of the meat
- Pork Belly - great, nothing beats the char from the grill
- Zucchini - unexpectedly good
- Hot dog - good, char makes it takes better
- Beef short rib - good, some room for improvement but hard to mess up
- Pizza - fail, should try pizza oven instead
- Pork Ribs - poor, first at temp was dry since I didn’t spray or have a water pan or wrap
