Hello, My Name Is Ice Cream goes over the science of making ice cream. This knowledge lets you adjust the recipes to suit your tastes and ingredients on hand.
I modified the cold pressed coffee ice cream recipe to use what I had available.
- 1-1/4 cup of heavy whipping cream
- 1-1/4 cup of milk
- 9oz can of cold pressed coffee
- 1/4 cup light corn syrup
- 3/4 cup sugar
- 5 egg yolks
- 2 teaspoons of tapioca starch
The cold pressed coffee ice cream was so yummy that I did not get a chance to eat much of it.
Great book that opens the door for more culinary adventures.
